Happy Fourth of July everyone!

Hope you all have a day filled with family and friends, good food, relaxation and a little reflection on what "a more perfect union" might look like.

If you have any ideas on how to get us there, I’m all ears.

Up from below, no cooking here today. Leftovers from two days of dinner guests. But, BUT going to my first ever Twins baseball game. Actually, pretty jazzed about it. Follow them closely enough via stats and snail news to feel like they’re “my” team, but this is gonna be way fun (not including driving into and back out of downtown Minneapolis during “let’s rip up every freakin’ street and highway in town, and let’s do ‘em all at the same time; hoo boy, some fun!!” season.

We’ll be having leftovers here today, too. We had friends over for dinner and a movie last night — watched the original Night At The Museum and had some baked chicken parmesan, whole grain pasta, caprese salad and berries and angel food cake for dessert.

And I’ve got leftovers out the wazoo for today. Yay — no cooking!

This is a perfect place to put a request. Does anyone have any really really favorite BBQ cookbooks to recommend? Mine dropped into oblivion: a small space between the refrigerator & the wall, where it will have to reside, unretrievable, to the end of time. (I store my cookbooks on the top of the wooden surround around the refrigerator. So while the frige is movable, the wooden surround is not.) I’m looking for a replacement.

I’ve got leftovers too, Italian chili, that I made because I bought some hot Italian sausage to BBQ, but it was too rainy, so I came across the chili recipe to make indoors. Also leftover asparagus and fennel to put into a nice salad.

And on another rainy day, I made my first cake from scratch (much superior to cake mix), and still have plenty of that to consume. In fact, I might have to freeze some before it starts getting stale.

Now that I’m teaching myself how to cook, I do read thru recipe books looking for ones that sound good. Haven’t made a dud yet, though did make some soups last winter that I won’t repeat.

Sadly, I don’t have a good BBQ cookbook to recommend. We don’t really grill very much here — I tend to use either the broiler or my grill pan inside on the few occasions when I’m “grilling” anything (and that ends up usually being either kebabs or veggies, honestly).

When it comes to BBQ, I’m pretty much no help, I’m afraid. But I’ve heard that Steven Raichlin’s books are good ones from friends who do BBQ a lot. You might check one of those?

We did angel food cake, too. Must reflect our angelic personalities, right? *g* Ours with strawberries, blueberries and whipped cream. Red, white and blue. Get it, get it? Pretty subtle! *g* Delicious. And a chicken salad wherein the chicken breasts were baked in buttermilk, and then sauteed in soy sauce and garlic. OMG (as opposed to MSG). And homemade brown bread. And corn on cob, cut up into little, manageable chunks. My cleverness simply astonishes me sometimes.

I do have a soup cookbook that I can recommend heartily. It’s divine, on more levels than one. *g*

Twelve Months of Monastery Soups by Brother Victor-Antoine d’Avila-Latourette. A dear friend of mine recommend this to me a while ago and some of the recipes are amazing, but the best part is that they are all done seasonally — so the produce for the soups is fresh.

Thanks for that. Last winter (after I got my freezer in mid-September), I went thru about half the soups in The New Basics. Most of which were excellent. Then made several from other books, some of which were so so. Your book sounds great. Thanks.

Any freezer scientists out there? My new fridge (i.e., fridge in new digs) has a bottom freezer. Near as I can tell, everything in it is freezing relatively rock hard. Except for ice cream, which is approaching puddly mess. Edy’s, mostly. It always trends soft, but never this soft. So, Abby, do I have a problem here?

Strawberry Pizza!

Bake pie crust on a pizza pan. Put a layer of vanilla pudding. (The kind you cook–not instant.) Put a layer of real whipped cream on top of that. Slice strawberries and put in a fancy design on the top. (Blueberries too for the 4th look.) You could even put mini-flags on it for the festivities.

Easy and yummy.

Just back from my friend/neighbor who fixed breakfast for my birthday. She also gave me a neat pair of multi-blade herb scissors….haven’t tried them with parsley yet but they work a trick with chives. Also a nice insulated travel mug.

Yesterday was sure an interesting pre-birthday present….which may turn out to be the worst one EVER if she starts cropping up on the idjit box 24/7 as will certainly happen. :-(((

Ya’ll have a great Fourth and watch out for the tea-baggers who are likely to be more bat shit nuts than usual!

My East Texas grandmother made the best cobbler I ever tasted. Peach cobbler, mostly, it was. She was an absolute genius with pastry. No recipe either. Instinct and a lot of practice sufficed.

Pecan pie, peach pie, apple pie, in season too; bananas (sprinkled with brown sugar and cinnamon) in pastry. Blackberry cobbler at this time of year. Fresh picked, sometimes by me.

And for a main course: Chicken pot pies and, at Thanksgiving, marvelous roasted chicken–direct from Cousin Fred’s farm–with homemade gravy and dressing. We almost never had turkey because the chickens were big and fresh from the farm–and why not?

Good memories of home.

I use this Easy Peach Cobbler recipe sometimes — it’s quick, and works with pretty much any fruit you have on hand. I add some old-fashioned oats to the batter, too, for a little crunch and fiber (about 1/4 cup or so).

I got a Brinkman smoker last year from Lowes and use it all the time now. I’ve done a smoked turkey, pulled pork and many racks of ribs. I recently found out about enhanced meat (stay away) and have my eye on a Big Green Egg as a smoker upgrade. Also found some really good websites to help guide me:

Yeah, hey you too. Oh, the job is pretty typical bs. Lots of politics in the office. The staff v. the manager. blah, blah, blah. Little tiny paycheck makes me happy, but the hours sure cut into my day. I go to the gym at 7 am now and then race around to get things done here.
I actually am enjoying the challenge of multi-tasking and the greater challenge of taking the high road when it comes to dealing with crabby people. *g*

I miss you as well. I have backed off the beer abit. Spec’s turned out to be less good than I would have thought, and my regular store has quit stocking it….so, I have to score in odd places…..I do have an occ. craving, and the nearby liquor store has said he mak e stock it. Just a little persistence. Good for your workout routine….I am so off & on,,,,and can feel it.Ugh ;)

I’m very late to this thread, but you might want to look at youtube of the Barbecue Pit Boys. They show all the steps for charcoal grilling and easy recipes, and they look very delicious when they are complete. They have a ton of different youtubes featuring beef, pork and seafood recipes.

A gazpacho that’s so easy it’s criminal:

5 ripe tomatoes, cut into 1 inch cubes
1 cucumber, quartered then sliced into 1/2 inch pieces
2 cups white corn fresh or frozen
1 green pepper, cut into square pieces
1 cup fresh chopped cilantro
1 large can tomato juice
(other crunchie veggies as desired, i.e., edamame, zucchini, etc.)

Mix all ingredients and chill in refrigerator.

That list up there reminds me = I got the ingredients for tabouli and keep forgetting to make it. And it’s so easy.

Question = Has anyone heard of Independence Day being renamed “Declaration Day?” Is it a fundie or wingnut thing?
Drove by (Protestant, forget denominatio) church a week ago and saw a notice on its board for “Declaration Day Service.” on the 4th.

Seems strange to me.
Anyone, off to the kitchen. No real cookin or bakin goin on – it’s our 16th straight day when it will reach 100 degrees or above. No point making the ac work harder than it already is.

Nope – but it says July 4th, so I assume they’re referring to Declaration of Independence.
btw, this is in San Antonio, Eisenhauer Rd.

I just saw a piece on ch. 5 news from a “tea party” in Marion, where they seem to be expecting both Perry and Wruzelbacher.
Got a good 2-3 min. report – a long piece for local news.
Hunh – where the heck is Marion? (off to the google map)
